During my youngest son’s senior year of high school, he went on a trip to Austin with his photography class. On the way, they stopped for ice cream. I have no idea where, but the place served Mexican vanilla ice cream. My son came home raving about it. So I tried to recreate it. I figured they had just used Mexican vanilla. Nope. He insisted it was different. So I went searching for recipes on the internet. I could not find any that were drastically different from what I had made. So I kept scouring. I found a vague reference to cinnamon in a post, but no recipe. So I started tinkering. first I added 1 tsp. of cinnamon and my son proclaimed it “close”. So I added another and wala! He thought it was very close and maybe even better than the ice cream he’d had in Austin. Oddly, You really don’t taste “cinnamon” at least I don’t. Not that that would be a bad thing, I love cinnamon, but somehow the cinnamon just enhances the vanilla flavor.
Mexican Vanilla Ice Cream
- 1 cup Whole Milk
- ¾ cup Sugar
- pinch Salt
- 2 cups Heavy Cream
- 1 tablespoon Vanilla
- 2 teaspoons Cinnamon
Instructions:
Mix all ingredients and pour into the bowl of ice cream maker. Run for 20 minutes.
