So I got my garden up and going and among the herbs I planted this year was lemon thyme. It smells awesome! So I got it and then I was like, ok now what do I do with it? Which lead me to searching the internet. I found a lemon thyme tea cake recipe and… I tinkered with it. It came out surprisingly yummy. It was a big hit with my kids, hubby and both my parents. My minion, aka my niece, said it tasted like a plant, but she was in an ornery mood, so I’m not counting that opinion, because come on, how many plants has she tasted? I mean really!
As the title suggests this is fantastic with a cup of hot tea and I dare say it would be fantastic with some iced cold tea as well. Enjoy!
Lemon Thyme Tea Bread
Bread:
- ¾ cup whole milk or half evaporated milk/half water
- 1 tablespoon minced fresh thyme or 1 teaspoon dried thyme
- ½ cup butter, softened
- 1 cup sugar
- 2 large eggs, room temperature
- 2 cups all-purpose flour
- 1-½ teaspoons baking powder
- ¼ teaspoon salt
- 1 tablespoon lemon juice
- 1 teaspoon lemon extract
- GLAZE:
- ½ cup confectioners’ sugar
- 1 tablespoon lemon juice
- ¼ teaspoon lemon extract
Preheat oven to 350 degrees in a microwave-safe bowl, combine milk and thyme. Microwave, uncovered, on high 1-2 minutes or until bubbly; cover and let stand until cooled to room temperature. In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine flour, baking powder and salt; add to creamed mixture. Add in milk mixture, lemon juice, and extract.
